Spinach and Cheese Pie

This recipe is from Charmaine Solomon's Complete Vegetarian Cookbook.
1 Pre-made pastry crust

1 large bunch spinach
4 leeks
1/2 bunch scallions
2 Tbsp olive oil
8 oz feta cheese
5 eggs
1 cup cottage cheese
1 cup grated cheddar
pepper to taste
1/2 tsp nutmeg

6 sheets filo pastry
2 oz melted butter
2 Tbsp olive oil

Spread the pastry crust on the base and sides of a 9x13 pan.

Wash the spinach and cook in a saucepan until just wilted.  Drain well.

Wash the leeks thoroughly and slice thinly.  Chop the scallions roughly.
Heat the olive oil in a heavy saucepan and toss the leeks in.  Cover and
cook on very low heat for about 15 minutes or until tender, stirring
now and then.  Remove from heat and add the spinach and scallions.

Cut feta cheese into small pieces and sprinkle evenly over pastry.
Beat the eggs, mix in the cottage cheese and cheddar, add pepper and
nutmeg, and stir in the vegetable mixture.  Pour into the disk.

Prepare the melted butter and olive oil.  Brush over half of a filo sheet.
Fold the sheet over to fit inside the dish and place over filling, pressing
lightly.  Continue brushing, folding, and placing filo sheets in dish.
Brush top with melted butter.  Cut diamond shapes in top layer of filo
with a sharp knife, sprinkle lightly with a few drops of water.

Bake in a preheated 375F oven for an hour, covering with foil if it
browns too quickly.  Serves 6-8.
